• 1 lb. Alaska cod fillets
• 1 cup Orzo (rice-shaped pasta)
• 2 peeled, seeded cucumber, cut into strips
• 8 sheets lettuce
• 1/4cup green onions, sliced
• 4 lemon slices
• 1 teaspoon lemon zest
• ½ cup blue cheese salad
• 4 teaspoon crushed red pepper
• ¼ tsp. lemon juice
• Salt and pepper

Mix grated lemon, blue cheese and lemon juice. Set aside a few minutes. Saute or broil fillets of cod. Cooking time should be between 4-8 minutes, but this should also depend the method used. Set aside again.
Boil 4 cups of salted water and add orzo. Cook until al dente, 8 to 10 minutes. Drain and cool.

Flake the cod fillets and place it with the orzo and cucumber slices in a bowl. Add the sauce and green onion. Mix with salt and pepper.

Divide the salad 4 plates with 2 lettuce underneath. Garnish with red pepper and lemon wedge.
